Pasta, pasta, pasta! We honestly can't get enough pasta in our house and I am always looking for easy and tasty new recipes to try. Gail Kennedy from The Splendid Olive in Oakville, Ontario shared with me this recipe and it is delicious! The use of the Meyer Lemon Olive Oil in this recipe is the perfect choice, such rich and fresh lemony flavour that pairs so well with the smokey briny artichokes. Perhaps add some sauteed shrimp or grilled chicken breast...mmm dinner made simply and quickly and oh so good!
Ingredients
- Pasta of your choice
- 3 Tbsp Meyer Lemon Olive Oil
- 1 shallot, finely chopped
- 1 clove garlic, thinly sliced
- 2 Tbsp capers
- juice of 1 lemon
- 1 tsp lemon zest
- 1/2 cup vegetable stock
- 2 Tbsp pasta water
- 1 jar Fume-eh Smoked Artichokes
- Salt and Pepper to taste
- Chopped fresh parsley and grated Parmesan to serve
Instructions
- Cook pasta in salted water until al dente...just means not mushy.
- Add Meyer Lemon Olive oil to sauté pan then add shallots and garlic. Cook over medium heat until shallots are translucent, approx. 3 minutes.
- Add the lemon juice, lemon zest, artichokes, capers and vegetable stock and let simmer for another 3-5 minutes.
- Add pasta water, taste and season with salt and pepper and then add in your pasta and toss to coat.
- Serve with chopped fresh parsley and grated parmesan.
Optional: Add sauteed prawns or grilled chicken breast for a little protein boost!
