Puttanesca with Smoked Castelvetrano Olives

I don't know about you but when the weather starts to turn the pasta comes out! Such an easy and delicious way to make everyone in the family happy and let me tell you this recipe is a favourite in our house. In most recipes this dish is made with black olives however by adding our Smoked Pitted Castelvetranos you get another layer of flavour that puts this dish over the top! PREP TIME: 10 min COOK TIME: 20 min
INGREDIENTS:
1/4 cup  Extra Virgin Olive Oil 
4-8 fillets  Whole Anchovies (omit for veggie option) 
4 cloves Garlic, minced 
1tsp Chili Peppers Flakes
1 jar Smoked Pitted Castelvetranos, sliced 
1/4 cup Capers 
2 tsp Dried Oregano
2- 14 oz tins San Marzano Tomatoes 
Salt and pepper to taste
1/2 cup Chopped Parsley
Spaghetti Noodles (or whatever shape you prefer)
METHOD:
  1. Heat olive oil in skillet over medium heat. Add anchovies (if you are using them) and mash into a paste with fork. Add the garlic and  sauté for 1 minute. Add the olives, capers, chili flakes and oregano, and sauté for another 1 to 2 minutes.
  2. Add the tomatoes. Bring to a boil. Reduce heat and let simmer, until slightly thickened, about 7 to10 minutes. 
  3. Toss with your favorite pasta noodle and chopped parsley.  Top with freshly shaved Grana Padano and serve.
