Potato Salad With Smoked Artichoke Tapenade

I know it might not feel like it for everyone yet but spring is here and summer is on its way! So why not start thinking and tweaking those summer recipes?

 Here’s a simple recipe that highlights the smokiness of our artichoke tapenade, the brightness of lemon juice and the brininess of capers. Easy to make ahead of time for a weeknight side or add some grilled lemony chicken or shrimp and make a meal out of it!

Smoky Artichoke Tapenade Potato Salad

 Ingredients:

  • 2 pounds of potatoes (Yukon Gold or red potatoes work well)
  • 1/2 cup FUME-eh Smoked Artichoke Tapenade
  • 2 Tbsp capers, rinsed and drained
  • 1 tsp lemon zest
  • Juice of 1 lemon (about 2 tablespoons)
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, finely chopped
  • Salt and pepper to taste

Instructions:

  1. The Potatoes:
       - Wash the potatoes and cut them into bite-sized pieces (you can peel them if you prefer, but leaving the skin on adds texture and flavor).
       - Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
       - Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and let simmer for about 10-15 minutes or until the potatoes are fork-tender but not mushy.
       - Drain the potatoes and let them cool slightly.

2. Prepare the Dressing:
   - In a large bowl, combine the smoked artichoke tapenade, capers, lemon juice, and olive oil. Whisk together until well combined. Add a pinch of salt and pepper but not too much, you will adjust once all mixed together.

3. Combine Ingredients:
   - Once the potatoes have cooled a bit (they can still be warm), add them to the bowl with the dressing. Gently toss to coat the potatoes evenly with the tapenade.

4. Taste and Adjust:
   - Taste the salad and add the seasoning.
You might want to add a bit more lemon juice for acidity or more olive oil for richness.

5. Chill or not and Serve:
   - I prefer this salad warm or room temperature to enhance the flavours
   

Tips:
- Feel free to add other ingredients like diced red onion, shredded Asiago or maybe fry up some of those capers for a crispy salty garnish. 
- This salad is perfect for picnics, barbecues, or as a side dish at dinner.
