Ok so pretty much everyone loves an ooey, gooey artichoke dip right?! Well guess what happens when you add a little smoke...it takes it to a whole other layer of deliciousness! This dip is honestly my new, secret, guilty pleasure. Ok not so secret anymore but I just couldn't keep it to myself. I prefer to use mozzarella but have substituted cheddar and it has worked beautifully. I have also made it without the spinach, because I didn't feel like going to the store, and it also worked out beautifully.
Bring this to your next potluck and I guarantee everyone will be begging for the recipe.
Ingredients:
- 250 gr Cream Cheese, softened
- 75 ml Mayonnaise
- 100 gr Parmesan Cheese, ground
- ½ tsp Dried Basil
- 1 jar FUME-eh Smoked Artichoke Tapenade
- 1/2 jar FUME-eh Smoked Artichoke, rough chopped (optional but gives more texture)
- 100 gr Frozen Spinach, chopped (thawed completely and squeezed dry)
- 1 clove Garlic, minced
- Pinch Salt & Pepper
- 100 gr Mozzarella or Cheddar if you prefer, shredded
- Mix cream cheese, mayonnaise, Parmesan cheese, garlic, basil, salt, and pepper together in a medium bowl.
- Gently stir in artichoke tapenade, chopped smoke artichokes and spinach.
- Transfer the mixture to a greased baking dish; top with mozzarella cheese.
- Bake in the 375F oven until bubbly and lightly browned, about 25 minutes.
- Serve with sliced baguette or crackers.
